Recipe: Carrot Cake (Orit Schwartz) 

Not long after I met Orit I encountered her in a mall selling a variety of cakes.  Orit was born in New Zealand so her repertoire includes a Carrot Cake.  I very much like this cake, so when Orit visited recently I insisted she teach me her recipe.   The cake is good regardless but you might be tempted by Orit's Cream Cheese Icing.  

  • Preheat oven to 180° C

1 cup Raisins

  • Soak in water until needed

1-1.5 cups Corn Oil (obviously more oil means more moist and more calories)
4 large eggs
1.5 cups Brown Sugar
1/4 cup Orange Juice

  • Combine all in a small bowl

2 cups plain flour
1/2 teaspoon mixed spice
1/2 cup chopped walnuts
1/3 teaspoon salt
2 teaspoon baking powder
1 teaspoon baking soda

  • Combine in a large bowl
  • Add the contents of the small bowl to the large bowl
  • Drain the raisins from above
  • Add the raisins to the large bowl

2 cups grated carrots

  • Add the carrots to the large bowl
  • Mix
  • Pour into 2 greased loaf tins
  • Bake at 180° C until brown (50-60 min)
  • Remove and leave to cool to room temperature
