Afghani Chicken (Roqiah Akrami)

Roqiah explained some traditional Afghani dishes to me - including this one.

2 tomatoes
1 onion
1 teaspoon honey
1 teaspoon salt
1 tablespoon lemon juice
Garlic
1 teaspoon mild curry powder
1 teaspoon coriander
Tiny bit of mint
Natural yoghurt (optional)

  • Mix well for marinade. Should be very thick.

1½ cups water (or more)

  • Add to marinade.

1 chicken in pieces

  • Dip in marinade. Place on oven tray.

  • Pour rest of marinade over top.

  • Chop and layer over chicken.

  • Boil tray on element. Bake in oven at 150° C for 30 min, then 250° C for 15 min.

  • Serve on big flat plate. Any extra gravy serve in a separate bowl.
