Chicken with Lemon and Coriander

Incredible. Serve chicken on noodles with a side salad.

2 tablespoons plain flour
Freshly ground black pepper

  • Combine

1.2 kg chicken pieces

  • Dust in the flour and pepper mix
  • Shake off excess

2 tablespoons olive oil

  • Heat in a pan
  • Fry chicken pieces until golden all over.
  • Reduce heat.

2 cups chicken stock
3 tablespoons lemon juice
3 tablespoons chopped fresh coriander
3 cloves garlic, crushed

  • Add to pan
  • Simmer for 15-20 minutes until chicken is cooked
  • Remove chicken from pan and keep warm

400 grams noodles and/or long pasta

  • While the chicken is cooking, cook the noodles as per instructions on packet

2 tablespoons cream

  • Stir into pan
  • Boil quickly until slightly thickened
  • Return the chicken to the pan and coat with the sauce
  • Serve with noodles and salad
