Chicken in Orange Sauce

From an Israeli newspaper. Serve with rice or pasta.

4 Chicken breast fillets

  • Beat until thin

Salt & pepper

  • Season chicken

½ Red Capsicum, in thin strips

  • Place on each chicken fillet.

Toothpicks

  • Roll fillets around capsicum, and pin with toothpick.

2 tablespoons olive oil

  • Heat in big non-stick pan.

  • Cook chicken until browned on all sides.

½ Cup Orange juice
½ Cup white wine
1 tablespoon lemon juice
1 tablespoon soy sauce
1 teaspoon sugar
Salt & pepper

  • Add to pan with chicken.

  • Cook (covered) on low heat for 15 minutes or until chicken cooked through.

  • Remove chicken from pan and put on serving dishes (minus toothpicks).

1 tablespoon cornflour

  • Thicken sauce in pan (about 2 minutes).

  • Pour over chicken.

Optional: Fresh parsley or coriander

  • Garnish
