Chicken Henny Penny Pie (Marian McKenzie)
Yum.
Water
300 g chicken bits
1 sliced onion
4 big bits of parsley
Bay leaf
1 sliced carrot
Poach until everything cooked and softish
Strain, retain liquid for stock
Store chicken stuff
30g butter
400 g spinach
2 leeks
Melt butter
add spinach and leeks
Cook on low heat until moisture evaporated
250g cottage cheese
Couple handfuls grated tasty cheese
Combine with chicken stuff and spinach stuff
Pastry
Roll out
Bung filling in middle of pie
Cook at medium heat until done
