Chicken Henny Penny Pie (Marian McKenzie)

Yum.

Water
300 g chicken bits
1 sliced onion
4 big bits of parsley
Bay leaf
1 sliced carrot

  • Poach until everything cooked and softish

  • Strain, retain liquid for stock

  • Store chicken stuff

30g butter
400 g spinach
2 leeks

  • Melt butter

  • add spinach and leeks

  • Cook on low heat until moisture evaporated

250g cottage cheese
Couple handfuls grated tasty cheese

  • Combine with chicken stuff and spinach stuff

Pastry

  • Roll out

  • Bung filling in middle of pie

  • Cook at medium heat until done
