Spicy Chicken and Vegetables

Serves 6

1 tablespoon oil
1 kg chicken thigh fillets, quartered

  • Heat oil

  • add chicken in batches,

  • cook, stirring, until chicken lightly browned

  • remove from pan

1 leek, sliced
2 cloves garlic

  • Heat oil

  • Add leek and garlic

  • Cook, stirring until the leek is soft

2 teaspoons curry powder
2 tablespoons grated fresh ginger
2 tablespoons grated lemon rind

  • Stir in to leek mixture

  • Cook, stirring for 1 min

1 kg bag frozen vegetables
300 ml cream

  • Add, with chicken, to pan

  • Simmer, uncovered, for 10 min (veges and chicken are tender and liquid has thickened slightly)

1/4 cup fresh parsley

  • Stir in

Red capsicum strips

  • Garnish
