Spicy Chicken and Vegetables
Serves 6
1 tablespoon oil
1 kg chicken thigh fillets, quartered
Heat oil
add chicken in batches,
cook, stirring, until chicken lightly browned
remove from pan
1 tablespoon oil
1 leek, sliced
2 cloves garlic
Heat oil
Add leek and garlic
Cook, stirring until the leek is soft
2 teaspoons curry powder
2 tablespoons grated fresh ginger
2 tablespoons grated lemon rind
Stir in to leek mixture
Cook, stirring for 1 min
1 kg bag frozen vegetables
300 ml cream
Add, with chicken, to pan
Simmer, uncovered, for 10 min (veges and chicken are tender and liquid has thickened slightly)
1/4 cup fresh parsley
Stir in
Red capsicum strips
Garnish
