Portuguese Roast Lamb (Ines Rato)

Actually I don't know whether this dish is Portuguese or Brazilian but Ines Rato who gave the recipe to me is Portuguese. Ines served this up at her place to a large group and it was yum. Aside from the potatoes mentioned below she served it with Brazilian lentils.

Leg of Lamb

  • Clean of the fat (white)

25 grams paprika (colorau in Portuguese)
1 clove garlic
1/3 cup white wine
salt and pepper

  • Mix
  • Baste lamb

Olive oil
Onion, chopped

  • put on top of the lamb
  • leave over night

Knobs of butter

  • dot the lamb
  • Heat oven to 180° C
  • Cook lamb in oven for 2+ hours, turn after 1/2 hour

Potatoes

  • Boil
  • Add to the lamb sauce
