BBQ Feast

My Weber Charcoal Kettle BBQ has seen a bit of action this summer so I thought I'd write up some of the menus we used.

BBQ Menu 30 Jul 2006

I cooked up BBQ for friends the other day, and it went like clockwork, so I thought I'd type it up so I remembered the timings and what goes where. Galit particularly likes the roasted onions - very sweet when cooked in their skins. Serve with green salad, white baps, tomato sauce, mayonnaise, and anything else you fancy

4 large onions, unpeeled

  • Onions: Position for indirect method (IM).
  • Cover BBQ and cook for 10 minutes.

500 grams baby potatoes, unpeeled

  • Onions: Leave on indirect method (IM).
  • Potatoes: Position for direct method (IM).
  • Cover BBQ and cook for 5 minutes.

500 grams chicken fillets, marinated

  • Onions: Move to direct method (DM).
  • Potatoes: Move to indirect method (IM).
  • Chicken: Position for indirect method (IM).
  • Cover BBQ and cook for 8 minutes.

4 beef burger patties (about 2 cm thick)

  • Onions: Position for indirect method (IM).
  • Potatoes: Leave on indirect method (IM)
  • Chicken: Turn over, brush with marinade, keep on indirect method (IM). .
  • Beef burgers: Position for direct method (DM)
  • Cover BBQ and cook for 6 minutes.
  • Beef burgers: Turn over, still on direct method (DM)
  • Cover BBQ and cook for 6 minutes.
  • Serve everything.

A more elaborate buffet which we thought was nicely balanced. Only a small portion was on the BBQ. One of the guests has Celiac, so much of this was gluten free (indicated by *). As it happens the only thing we really had to do differently was ensure the Soy Sauce and Mayonnaise were gluten free.
