Marinated Vegetable Salad
6 cups vegetables
Steam, or microwave covered on high for 2-3 minutes
cool in water
drain
1 tablespoon root ginger
1/2 cup white wine vinegar
1/4 cup sugar
3/4 cups water
bring to boil, or microwave on high for 1 minute
cool
pour over vegetables
marinate 3-4 hours
