Marinated Vegetable Salad

6 cups vegetables

  • Steam, or microwave covered on high for 2-3 minutes

  • cool in water

  • drain

1 tablespoon root ginger

1/2 cup white wine vinegar

1/4 cup sugar

3/4 cups water

  • bring to boil, or microwave on high for 1 minute

  • cool

  • pour over vegetables

  • marinate 3-4 hours
