Salsa

Salsa means "sauce" and is both a great food from Mexico and my favourite dance style. The food variation is a combination of chopped, diced or grated vegetables, fruit and herbs. The herbs - typically coriander - and lemon/lime juice bring it to life. Good with with smoked, grilled or BBQ chicken and/or fish. If you want to try something a little less zingy, but still very tasty, then try the Roast Capsicum Dip.

Main flavour (one of):

4 tomatoes, diced
or 2 large avocados, diced
or 1 large cucumber (2-3 small), peeled, deseeded, diced
or 2-4 cups mixed fresh sweet fruit and vege (red capsicum, pineapple, mango, kiwifruit, cranberry sauce)

1/2 - 1 red onion and/or 2-4 spring onions, chopped finely
Up to 1/4 cup fresh herbs (coriander, basil, mint), chopped
Up to 2 lemons and/or limes, juice only
Chilli of choice (sauce, powder, chopped fresh)
Salt and Pepper
[Optional] 1 - 3 cloves garlic, minced
[Optional] 1 - 2 tomatoes, diced
[Optional] 1 - 2 capsicums (raw or roasted), diced
[Optional] 1 radish, finely diced
[Optional] 2 - 3 Tablespoons olive/vegetable oil

  • Combine salsa ingredients in a bowl.
  • Let mixture stand for 15-20 min to develop flavour.
  • Adjust salt, lemon/lime juice and/or oil to taste
