Potato and Corn Soup

Microwave Version

Solid and quick. Warning: Last time I did it, the potatoes didnt cook in time.

500 g potatoes, diced

1 onion

  • Microwave on high for 6-8 min.

2 cups stock

  • Add.

  • Microwave for 8-10 min.

2 cans corn (800 ml total)

1 tablespoon flour or corn flour

1/2 teaspoon thyme or Nutmeg

Add.

  • Microwave for 4-5 min.

My version of the microwaved soup. Better than the original, good even, but very heavy..

500 g potatoes, diced

1 onion, chopped

1.5 cups stock

  • Mix.

  • Bring to boil.

  • Simmer until potatoes are cooked.

2 cans corn (800 ml total)

1 tablespoon flour or corn flour

1/2 teaspoon thyme or nutmeg

1/2 cup of milk

  • Add.

  • Bring back to boil.

  • Remove from heat.

  • Remove to ¾ of soup, blend and pour back with the rest.
