Pickled Onions (Jane Bray)

Not really a starter but I didn't really know where else to put the recipe. Good. Sharp.

Jars

  • Wash

  • Bake at 110° C for 10 minutes

Lids

  • Boil for 5 minutes

1.5 kg onions

  • Pour boiling water over

  • Leave 40 seconds

  • Peel

  • Tip into cold water

  • Fill jars

1200 ml malt vinegar

250 g honey

1 teaspoon black peppercorns

1 teaspoon ginger

2-4 chillies (whole)

  • Boil

  • Simmer for 5 minutes

  • Cool

  • Pour over bottled onions

  • Seal
