Pickled Onions (Jane Bray)
Not really a starter but I didn't really know where else to put the recipe. Good. Sharp.
Jars
Wash
Bake at 110° C for 10 minutes
Lids
Boil for 5 minutes
1.5 kg onions
Pour boiling water over
Leave 40 seconds
Peel
Tip into cold water
Fill jars
1200 ml malt vinegar
250 g honey
1 teaspoon black peppercorns
1 teaspoon ginger
2-4 chillies (whole)
Boil
Simmer for 5 minutes
Cool
Pour over bottled onions
Seal
