Carob Cake (Jen Simons)

Jen’s was great. Mine was missing her secret ingredient

Cake

2 cups Wholewheat flour

2 teaspoons baking powder

2 cups coconut

1 cup raw sugar

2 tablespoons carob powder (sifted)

  • mix

225 Butter, melted

  • mix into dry ingredients

1 cup sultanas

1 teaspoon vanilla

1 1/2 cups milk

  • stir into mixture

  • Bake 170° C for 30 minutes

To make Carob icing

125 g cream cheese (Jen said 250 g, but this was too much)

  • Beat

2 tablespoons carob

  • Mix in by hand

1 tablespoon honey (might be too little - too bitter)

  • add, beat
