Peta’s Aunt Edna’s Fig and Chocolate Fruitcake

700 g dried figs cut in quarters

200 g raisins

Brandy

Orange juice

  • Soak the fruit in a bowl for 24 hours

  • Drain

300 g butter

1 2/3 cups brown sugar

1 tablespoon black treacle

Cream

Grated rind of 2 lemons

  • Add to butter mixture

5 large eggs

2 tablespoons brandy or rum

  • Whisk

  • Stir into the butter mixture

2 ¼ cups flour (350 g)

1 teaspoon salt

2 teaspoons baking powder

1 teaspoon mixed spice

1 teaspoon cinnamon

  • Sieve onto stir into butter mixture

  • Stir in the fruit

100 g blanched almonds

700 g dark cooking chocolate smashed into bits

  • Mix in

  • Put into a very big greased and floured cake tin and bake in at 175 cups for 1 ½ hours

  • Bake at 150 cups for another 3 hours. Put aluminium foil over top if in danger of burning.
