Spinach Lasagne (Leigh White)

I seem to recall I got this from Leigh White.

2 cloves garlic, chopped
2 small onions, chopped

  • 2 minutes on high

2 tablespoons water
1 celery stick
1 cup zucchini
1 cup carrot, grated
1 cup capsicum
1/2 cup mushrooms
300 g spinach, washed & chopped
1 teaspoon dried oregano/basil/rosemary
2 tins tomatoes

  • add to onions

  • cook on high for 10 minutes

little milk
4 tablespoons cornflour

  • mix to paste

2 cups milk
2 bay leaves
100 g cheese
paprika

  • add to cornflour

  • cook 2 minutes on high

  • stir

  • 2 minutes on high

  • remove bay leaves

Lasagne

  • layer lasagne, vegetables and white sauce

  • bake 30 minutes
