Sugar Snap Peas with Tomatoes and Oregano
600 grams sugar snap peas
- Steam or microwave
- Place on plate
Oil
1 small red Spanish onion, finely chopped
- Cook in pan until soft
8 cherry tomatoes, halved
1 teaspoon sugar
- Add to pan
- Cook 2 minutes or until tomatoes are just soft
1 tablespoon balsamic vinegar
1 tablespoon water
1 tablespoon fresh oregano, chopped
- Stir into pan
- Place on top of peas
