Vegetables in Wine Sauce (Bernard Laevens)
Simple and exquisite. Serve with rice or potatoes or couscous.
Prunes
Wine
Port
Sherry
(Can use beer instead of wine etc – prunes and beer go well together )
Soak prunes for ½ hour
Onions
Garlic
Fry
Vegetables
Add to onion & garlic
Cook until prunes are ready (soaked)
Add prunes mixture
Juice of 1-2 lemons
Sprinkle of paprika
2 teaspoons Cumin
2-3 teaspoons Mild Curry Powder
Oregano
Rosemary
Chick peas (cooked)
Chicken (optional)
Add
Cook 20-30 minutes to allow prunes to change taste of sauce
