Vegetables in Wine Sauce (Bernard Laevens)

Simple and exquisite. Serve with rice or potatoes or couscous.

Prunes
Wine
Port
Sherry
(Can use beer instead of wine etc – prunes and beer go well together )

  • Soak prunes for ½ hour

Onions
Garlic

  • Fry

Vegetables

  • Add to onion & garlic

  • Cook until prunes are ready (soaked)

  • Add prunes mixture

Juice of 1-2 lemons
Sprinkle of paprika
2 teaspoons Cumin
2-3 teaspoons Mild Curry Powder
Oregano
Rosemary
Chick peas (cooked)
Chicken (optional)

  • Add

  • Cook 20-30 minutes to allow prunes to change taste of sauce
